STEWED TOMATOES AND OKRA Recipe 1 tbsp. olive oil 1/2 c. diced red bell pepper 1 garlic clove, minced 1/2 c. onion, sliced 1/2 lb. tomatoes, cored and diced 1/4 tsp. dried thyme Salt and pepper to taste 1/4 lb. okra, trimmed and cut into 2-3 pieces each Heat oil in large skillet; add bell pepper, garlic, and onion.
